Ingredients:
- 1 lb mushrooms, shredded
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 2 tbsp chipotle peppers in adobo sauce, minced
- 1/4 cup vegetable broth
- 2 tbsp tomato paste
- 1 tbsp soy sauce
- 1 tbsp maple syrup
- Salt and pepper to taste
- 4 sandwich buns
- 1 cup coleslaw mix
- 1 avocado, sliced
- Pickled jalapeos for topping optional
Instructions:
In a skillet, saut onions until translucent, then add garlic and cook for another minute
Add shredded mushrooms and cook until they release their moisture and reduce in volume
Stir in chipotle peppers, vegetable broth, tomato paste, soy sauce, maple syrup, salt, and pepper
Simmer for 10-15 minutes until the mixture thickens and flavors meld
Toast the sandwich buns
Assemble sandwiches by layering mushroom mixture, coleslaw, avocado slices, and pickled jalapeos if desired
