Blood Orange Salad with Ginger and Cayenne Blood Orange Vinaigrette

The Blood Orange Salad with Ginger and Cayenne Blood Orange Vinaigrette is bright and refreshing, and the flavors and textures go so well together. Its just the right amount of sweet and sour, and the cayenne pepper adds a little heat. This salad is full of good things for you, and the blood oranges give it a splash of color and juicy flavor.

Ingredients:

  • 3 blood oranges, peeled and sliced
  • 4 cups mixed greens
  • 1/2 red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup sliced almonds, toasted
  • For the vinaigrette:
  • 2 tablespoons blood orange juice
  • 2 tablespoons olive oil
  • 1 teaspoon fresh ginger, grated
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste

Instructions:

In a large bowl, combine the mixed greens and sliced red onion

Arrange the blood orange slices on top of the greens

Sprinkle crumbled feta cheese and toasted sliced almonds over the salad

In a small bowl, whisk together blood orange juice, olive oil, grated ginger, cayenne pepper, salt, and pepper to make the vinaigrette

Drizzle the vinaigrette over the salad just before serving
