Ingredients:
- 4 chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 can 14 oz artichoke hearts, drained and quartered
- 1/4 cup chicken broth
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon chopped fresh parsley
Instructions:
Add salt and pepper to the chicken breasts
In a pan, heat the olive oil over medium-high heat
It will take about 4 to 5 minutes on each side for the chicken breasts to turn golden brown after you add them
Take it out of the pan and set it aside
Put minced garlic in the same pan and cook for one minute
After you add the artichoke hearts, cook for another two to three minutes
Add the lemon juice, lemon zest, and chicken broth
Use a stir to mix
Put the chicken breasts back in the pan
Put the lid on and cook on low heat for 10 to 12 minutes, or until the chicken is fully cooked
Before you serve, sprinkle with chopped parsley
