Ingredients:
- For Smokey Chipotle Cheddar Burgers:
- 500g ground beef
- 1/4 cup breadcrumbs
- 1/4 cup grated chipotle cheddar cheese
- 1 tablespoon chipotle sauce
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 4 burger buns
- Lettuce, tomato, onion slices for garnish
- For Mexican Sweet Corn Fritters:
- 1 cup corn kernels
- 1/2 cup all-purpose flour
- 1/4 cup finely chopped cilantro
- 1/4 cup finely chopped red onion
- 1 jalapeno, seeded and finely chopped
- 1/2 teaspoon ground cumin
- 1/4 teaspoon chili powder
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 2 eggs, beaten
- 2 tablespoons vegetable oil for frying
Instructions:
Put ground beef, breadcrumbs, chipotle cheddar cheese, chipotle sauce, smoked paprika, salt, and pepper in a bowl
Mix the ingredients together until they are well mixed
Make 4 patties out of the mixture
Get a grill or grill pan hot, but not too hot
For about 4 to 5 minutes on each side, or until done to your liking, cook the burgers
On the grill, toast the buns for one minute
Add lettuce, tomato, and onion slices to burgers to make them
Put corn kernels, flour, cilantro, red onion, jalapeno, cumin, chili powder, garlic powder, salt, and pepper in a bowl
This is how you make Mexican Sweet Corn Fritters
Add the beaten eggs and stir until everything is well mixed
Put oil in a pan and heat it over medium-low heat
Put spoonfuls of the corn mixture into the pan and use the back of the spoon to make them a little flatter
For two to three minutes on each side, or until golden brown and crispy, remove from heat
Move to a plate lined with paper towels to drain off extra oil
Warm fritters should be served with the burgers
